    Egg less Whole Wheat Carrot Cake is a yummy cake recipe made with grated carrots, nuts, dry fruits and no eggs! The addition of carrots and nuts gives a nice texture and unbelievably delicious taste, also provide nutrients!

    Healthier vegetable which are excellent sources of vitamin A, C & K, fiber and potassium. Has many goodness like improves immunity and control heart diseases, improves eyesight, promote healthy skin and hair. Keep carrots in regular diet plan. 


    This version of carrot cake is healthy, using a small amount of olive oil, wheat flour, brown sugar or honey or jaggery powder (any one).

    In dry fruits , the crunchy walnuts even add a bit of omega-3 fats to this sweet treat. With a cup of hot green tea, this cake will make you forget about cream cheese frosting and will cherish your whole day with freshness. Enjoy!!!!

    Preparation:

    Rinse, peel and finely grate the carrot.
    Grease a loaf pan very well with oil and dust with flour. set aside, Also preheat oven to 180 degrees Celsius for 15 minutes.

    sifting dry ingredients for cake batter:

    In a Sieve take dry ingredients in a bowl -( whole wheat flour, baking powder, soda, salt, cinnamon powder). Sift and keep aside.

    Making carrot cake batter:

    In a bowl, take curd, milk, oil, vanilla essence and powdered brown sugar. Mix together till sugar dissolves.

    Now, add dry ingredients with wet ingredients to prepare a smooth batter. combine well with cut and fold method adding water if required.

    Add in chopped nuts and grated carrot. Mix well.

    Pour the cake batter in the prepared pan. Gently shake and tap the pan so that the cake batter spreads evenly in the pan.

    Bake in the pre heated oven at 180 degrees for 30-40 minutes or until the edges start to leave the tin and a skewer inserted comes out clean.

    Cool down the cake completely. and later cut to slice and serve. Finally serve the carrot cake or store in air tight container.

    NOTE:
    1. firstly, add more grated carrot to make cake more nutritious.
    2. also, add dry fruits like dates, cashew, walnut to make more healthy and rich.
    3. finally, carrot cake stays good for a week when refrigerated.
