Ingredients

500 gm grated Carrots
500 ml Milk
1 tbsp Ghee
Green cardamom powder 1 tsp
250 gm Sugar
1/4 cup Mawa ( khoya)
1/2 tsp Saffron
Almonds and pistachio sliced 2 tbsp each
Cashew Nuts 10 -15 ( cut each into 4-5 pieces)

    Methods:

    Wash the carrots well and trim both ends.

    Peel of the skin and using grater , grate all the carrots.

    Mix carrots and milk in a pan,bring to boil.cook on law flame.

    When milk half dries add sugar and cook till sugar water evaporates.

    Now take a another pan and put ghee till it is melted properly then add cashew nuts fry it for 1-2 minutes.

    Now transfer the carrot mixture, cardamom powder and fry well for 15-20 minutes.

    Finally add Mawa(khoya) , saffron,almonds and pistachio sliced, leave it on dum for 10 minutes.Carrot halwa is ready to eat and enjoy!!!

    Take it out in a serving dish. Serve it hot or cold as per your taste and preference.
