Eggless Suji Cake is an easy recipe made without the use of eggs. This makes for one for the best alternatives for vegetarians as compared to regular cake with eggs.As the name suggests, suji cake is made with suji or rava. The dessert can be easily baked in an oven, keeping the health factor intact or alternatively you can cook it in pressure cooker or microwave.The dessert is a great pick for the festive season and is especially loved by the kids. Preheat oven to 180 degrees C.

In a mixing bowl take curd/yogurt, oil, sugar & suji/semolina. Mix it well.

Add water slowly in batches and mix. Make a smooth lump free batter.

Cover and keep it aside for 15 minutes.

After 15 minutes the rava/semolina will absorb all the ingredients and better will become thick.
Now add Flour, baking powder, baking soda, milk & vanilla essence. mix it gently.

Grease the cake tin with oil and dust it with flour. line it with butter paper.
Pour the batter in the cake tin & tap it twice to remove any air bubbles.

Sprinkle some tutti frutti over it.

Bake for 25 - 30 minutes or until a wooden pick inserted in the centre comes out clean.
further, cool down the cake completely. also transfer the cake to cooling rack to cool faster.
finally, cut the cake and serve rava cake along with masala tea in your evening snacks.

How to Make without Oven:

Heat a kadhai/heavy bottom vessel on medium flame. keep a hot pot stand in the middle. cover it with a lid. preheat for 5- 10 minutes on medium flame.

After 10 minutes open the lid of kadhai. carefully plac e the cake tin or regular small steel katori over the stand.

Bake for 30- 35 minutes on low flame. After 30 minutes insert a skewer, if it comes out clean then cake is ready.
let it cool down completely. finally slice the cake & Enjoy...!

Notes: After keeping the rava cake batter aside for 25 minutes, prepare the oven setup.
Preheat the kadhai on a medium flame for 5 minutes or oven 180 degree C.
Bake the rave on low flame.
You can replace tutti frutti with any dry fruits of your choice.
