Ingredients
- 1 cup (165 grams) jaggery / gud, grated
- ¾ cup (135 grams) olive oil
- ½ cup (125 grams) curd
- 2 cup (300 grams) wheat flour / atta
- ¼ tsp baking soda
- 1 tsp baking powder
- ¼ tsp cinnamon powder
- pinch salt
- 1 1/2 cup water
- 2 tbsp almonds , chopped
- 2 tbsp raisins / kishmish (optional)
- 5 cashew chopped
- 5 walnuts chopped
- 6 dates , chopped
Directions
Whole Wheat Jaggery Cake is a healthy, yummy cake. Its recipe is made without sugar and without egg and hence making a healthy cake recipe. moreover, this cake can also be served
for breakfast and not just limiting for dessert.
Steps
1 Done | firstly, in a large mixing bowl take 1 cup jaggery, ¾ cup olive oil, ½ cup curd. |
2 Done | whisk well making sure jaggery dissolves completely. |
3 Done | further, add 2 cup wheat flour, ¼ tsp baking soda, 1 tsp baking powder, ¼ tsp cinnamon powder and pinch salt. |
4 Done | sieve all together making sure there are no lumps. |
5 Done | mix well with cut and fold method until all the dry ingredients combine well with the mixture. |
6 Done | Do not over mix as the cake turns out to be chewy and hard. |
7 Done | Also, add ½ cup water or as required and prepare a thick batter. |
8 Done | Then add 2 tbsp almonds, 2 tbsp raisins, 5 cashew, 5 walnuts and 6 dates. |
9 Done | Fold gently making sure the dry fruits are mixed well. |
10 Done | transfer the batter to the cake tray or bread mould. make sure to grease the mould and place a butter paper at the bottom to avoid sticking. |
11 Done | Top with more dry fruits to make it look more attractive. |
12 Done | pat the tray twice to remove the air incorporated into the batter. |
13 Done | place the cake tray into the preheated oven. bake the cake at 180 degree celsius or 356 degrees fahrenheit for 40 minutes. OR |
14 Done | Then, allow the cake to cool completely and later cut into thick slices and serve. |

16 Done | NOTE: firstly, use butter / any neutral flavored oil if you do not want to use olive oil. |
