- 1 cup Green mung beans
- 2 -3 Garlic clove
- 2 Green chilly
- 1 cup ( wash neatly and boil for 2 minutes) Fresh spinach
- 1 cup Bottle Gourd
- 1 tbsp Lemon Juice
- 1 tsp Black pepper powder
- to taste Salt
- optional Carrots
This healthful vegan soup is high in protein. Made with Mung beans and this soup is flavorful yet simple and easy to make.
Wash and pressure cook the mung beans , salt & bottle gourd along with enough water till soft.
Take a grinder jar put boiled spinach,garlic clove ,green chili and grind it to make a smooth paste.
Now open the pressure cooker and transfer all it to another wok then keep it on a medium flame for 2-3 minutes.
Now add a smooth paste ( pt.3) and black pepper powder.
Finally add Lemon juice and serve warm.
Garnish on top with the mint leaves.
