Step 1 - how to Make Chicken Fajita Masala

2 teaspoon Chili powder, 2 teaspoon Paprika powder, 2 teaspoon Garlic Powder, 2 teaspoon Cumin powder, 2 teaspoon Sea Salt , 1 teaspoon Dried Oregano and ½ teaspoon Black Pepper Powder mix all these ingredients and its Ready for use.

Step 2 - chicken Marinate :

First wash and clean the chicken properly and soak the excess water then Pound the chicken Breast.

Cut them into medium pieces. In a large bowl take that chicken pieces and add ¼ cup Olive Oil, 4 tablespoon Lime Juice, 3 tablespoon Spice mix (chicken fajita masala STEP -1) mix it very well & keep it for few hours or overnight works really best .

Heat 1-2 tbsp oil in a frying pan & one by one add all the chicken pieces. Cook them completely in little oil until charred.
once chicken is cooked completely then switch of the flame & transfer it into a plate and keep aside.

Ingredients for Rice :

Take a another heavy skillet pan heat 2-3 tbsp oil (use the same pan u used for frying chicken, it will give more flavor to the dish).Now add the onion & saute properly until translucent.

Then Add capsicums and give 1-2 stirs. Do not let them soften.
Now add water(which is sufficient to cook the rice properly), the chicken cubes, chicken fajita masala 1 tbsp and mix very well. Now add soaked rice. (don't wait until the rice is boiled as not needed to make the vegetables fully cooked)
Mixed it very well, Add the Fry chicken Fajitaa on the top of it and close the lid with medium flame till water is little dried after 5-10 min. open the lid and check the rice, salt if its proper, the water is almost evaporated put on dum (steam).

Serve with cilantro and lemon wedges.

Notes
Make sure almost all the water gets evaporated from the chicken and veggies. Else it will make the fajita rice sticky and mushy.
