Penne Arrabiata – Arrabiata is Italian for “Angry”. Try this home made classic Italian pasta dish with penne noodles in a spicy tomato based sauce with fresh Parmesan, basil and parsley. This simple Italian Pasta dish is one of my favorites, and it only takes 20 minutes to make!

Cook pasta in a large pot of boiling water, according to package instructions, until tender.

Blanch tomatoes, peel, remove seeds and roughly chop.

Heat olive oil in a large skillet over medium heat. Add chopped garlic and saute for half a minute.

Add red chili flakes and continue to saute. now add tomato concasse(roughly chopped) and mix very well.

Then add tomato puree and mix very well.
After 1 minute add salt and oregano and mix well. Bring to a simmer over low heat and cook for 5-10 minute till the mixture gets a sauce consistency.

When pasta is cooked, drain the water and add it to the sauce. Toss well. Taste and add more red pepper flakes or salt and black pepper, if needed.

Serve immediately topped with a generous portion of grated Parmesan cheese and fresh chopped parsley.
