Ingredients

For spiced potato stuffing: For spiced potato stuffing
300 gms Boiled and Mashed Potatoes
Crushed to a paste in a mortal pastle 6-7 Garlic + 1 to 2 green chilies + 1 inch Ginger
A pinch Hing
1/8 tsp Turmeric powder
1/2 tsp Cumin seeds
1 1/2 tbsp Chopped Coriander laeves
1 tbsp Chopped Mint Leave
as required Salt
4-5 Curry leaves
For Batter:
1 to 1.25 cup Gram flour
1 pinch Baking Soda ( optional)
as required Salt
1 tsp Red chili powder
as required Water
For Green Chutney
1 cup Coriander leaves (chopped)
1 to 2 Garlic clove
2 to 3 drops Lemon Juice
2 to 3 Green chilies (chopped)
as required Salt
Other Ingredients:
2 tbsp (optional) Dry red chutney
8 Pav or bread rolls
Oil for frying

Vada pav

Vada Pav very famous in Maharashtra and many of its stalls can be seen on the roads of Mumbai. It is the most affordable and popular fast food in Mumbai. It's a fantastic, spicy little sandwich that consists of a Batata Vada (mashed potato fritter) sandwiched between two slices of a pav (mini bun). Serve with family members and friends.

Vada Pav very famous in Maharashtra and many of its stalls can be seen on the roads of Mumbai. It is the most affordable and popular fast food in Mumbai.  It’s a fantastic, spicy little sandwich that consists of a Batata Vada (mashed potato fritter) sandwiched between two slices of a pav (mini bun). Preparing Green Chutney:

Grind all the green chutney ingredients with little water till smooth. avoid making a water chutney.

Preparing of batata vada:

Boil 2 large potatoes, about 300 grams till they are completely cooked. Peel and then Mash them with a fork in a bowl.

Heat 2-3 tsp oil in a small pan. Add 1/2 tsp mustard seeds, a pinch of hing, cumin seeds & curry leaves. stir & saute for about 5 seconds.

Then add 6-7 garlic, 1-2 green chilies & 1 inch ginger which have been crushed in a mortal pastel. add 1/8 tsp turmeric powder. stir till the raw aroma of garlic goes away.

Pour this tempering in the mashed potatoes.

Add 1 -2 tbsp chopped coriander leave & mint leave. Also add salt.

Mix everything well and then make small to medium balls from the mashed potato mixture. flatten these balls a bit. Cover & keep aside.

In another bowl, make a smooth batter from 1 to 1.25 cups Gram flour ( Besan) ,1/2 tsp red chili powder, a pinch of baking soda(optional) salt & 1/2 cup water. The batter should not be too thick or thin. if the batter become thick, then add 1 to 2 tbsp water. keep[ aside.

In a kadai or pan, heat oil for deep frying. dip the slightly falttened potato balls in the batter & coat it evenly with the batter.

Gently drop these batter coated potato balls in medium heat oil. Depending on the size of the kadai or pan, you can add more or less of the vadas while frying. deep fry these vadas till golden evenly. drain them on a kitchen paper towel. make all vadas this way & keep aside.

Slice the pav without breaking it into two parts and keep aside. spread green chutney on the sliced pav. sprinkle the dry garlic chutney. this is optional and if you don't have you can skip it. place the hot batata vada sandwiched in the bread slice.

Serve vada pav immediately or else the pav becomes soggy. you can also serve some fried green chilies.
